Not a fan of tomato? Swap the passata for 10g Dijon mustard mixed with 20g mascarpone cheese to make a smooth paste :)

Ingredients

1 batch of Suet Pastry (see recipe)

475-500g Pork Fillet
-
50g Homemade Tomato Sauce / Liam’s Tomato Sauce / Passata
Directions
Follow the instructions for the suet pastry and preheat the oven to 180°C.
Between 2 sheets of greaseproof paper, roll out the pastry to a suitable size to wrap the pork fillet.
Spread the tomato sauce around the centre of the pastry and use the greaseproof paper to roll the fillet.
Tuck in the ends of the pastry to seal the fillet in.
Bake for around 10-15 minutes with the greaseproof paper on. The paper should now easily come away from the pastry. Cook for another 35-40 minutes.
Once cooked, allow the fillet to rest for 5-10 minutes before slicing.
