A sight adaption to our nut-free fluffy pancakes mix, this recipe not only makes a great breakfast, but also a delicious dessert! Serve with Greek or Greek-Style yogurt, berries, almond butter, or even a drizzle of pouring cream :)
Makes 3 portions - each portion contains:
156 Calories / 2.9g Carbs / 11.2g Protein / 8.6g Fat
Ingredients

4 Large Eggs

80ml Unsweetened Almond Milk (or other milk of your choice - e.g. cartonned coconut 'milk')

35g Coconut Flour

10g Cocoa Powder

1 tsp Vanilla Essence / Extract

1/2 tsp Baking Powder
Directions
Whisk the eggs, milk and vanilla together in a bowl.
Add the remaining ingredients and whisk until smooth.
In a good non-stick pan, a crepe pan, or a waffle press, pour a third of the mix in. If you're cooking these in a pan, you may need to add around 5g butter to the pan first and pour the mix in smaller amounts to make lots of mini pancakes instead of a few large ones. Allow the mix to cool until air bubbles start to appear in the top. Gently turn the pancake over to finish cooking. If you open your waffle press too early, the waffle may split in half!
