I want to use coconut flour instead of ground almonds / almond flour - can I use the same quantity?
The general rule we follow when swapping ground almonds for coconut flour is use a third of the weight and add an egg. So for the vanilla muffin recipes in the library, the original one uses 120g ground almonds & 2 eggs. The nut free alternative uses 40g coconut flour & 3 eggs. Coconut flour absorbs much more moisture than ground almonds so swapping 1:1 usually won't work.
