I love putting this in a small glass, so you can see the layers :)
This was made as part of the '5 Desserts with 5 Ingredients' class Michele ran with our members. The goal was to create 5 desserts with 5 main ingredients, plus a few cupboard basics. For more info on our membership, click here.
The other four desserts in this series are: Black Forest Gateau / Fruit Crumble & Custard / Fruit Compote, Fruit Fool & Toasted Almonds / Creme Brulee.

Ingredients
-
50g 85% Dark Chocolate (plus a little more for drizzling)
-
1 Egg
-
115g Double Cream
-
1 tsp Vanilla Extract
-
1/4 tsp Baking Powder
-
Pinch of salt
Directions
Melt the chocolate in the microwave, in bursts of 30 seconds, checking between each burst to ensure it doesn't burn.
Meanwhile, whisk up 100g cream, do not over whip, until soft peaks form.
Whisk 1 egg in a bowl with a fork, then add 20g melted chocolate, the sweetener, the remaining 15g un-whisked cream, vanilla extract, baking powder and salt.
Mix these together and microwave for 1 minute.
In a new bowl, add 40g whisked cream and 15g melted chocolate. Stir and it will thicken. Once mixed, put it back in the microwave for 5-10 seconds. This will become more like a custard.
Pour equal measures into four pots and top with the microwaved cake, broken into pieces.
Make the chocolate sauce again and pour over the cake.
Top each pot with 20g whipped cream.
Drizzle the remaining melted chocolate over the cream.
