Fruit Compote and Fruit Fool, with Toasted Almonds
I love putting this in a small glass, so you can see the layers :)
This was made as part of the '5 Desserts with 5 Ingredients' class Michele ran with our members. The goal was to create 5 desserts with 5 main ingredients, plus a few cupboard basics. For more info on our membership, click here.

211 Calories / 3.7g Carbs / 2.2g Protein / 20.3g Fat
160g Mixed Berries
Truvia / Natvia / Pure Via Sweetener (to taste)
120g Double Cream
1/2 tsp Vanilla Extract
20g Flaked Almonds
15g Unsalted Butter
Add 20g of cooked berries to each pot
In a separate bowl add 80g cream, 80g berries, sweetener to taste, and mix
Add this to the top of the berries.
In another bowl add 40g cream and 1/2 tsp vanilla extract. Mix and top the fruit fool.
Put the flaked almonds in a saucepan with 15g butter and a little sweetener and fry till lightly brown.
Once cooled put on top of the fruit fool.
