Don't be fooled by the portion size. Yes its small, but it's perfect!
This was made as part of the '5 Desserts with 5 Ingredients' class Michele ran with our members. The goal was to create 5 desserts with 5 main ingredients, plus a few cupboard basics. For more info on our membership, click here.

Makes 4 portions - each portion contains:
209 Calories / 2.2g Carbs / 2g Protein / 21.3g Fat
Ingredients

2 Egg Yolks

20g Truvia / Natvia / Pure Via Sweetener plus a little more to sprinkle on top

160g Double Cream

1 tsp Vanilla Extract

Pinch of salt
Directions
Preheat the oven or air fryer to 160°C.
In a saucepan, add the cream, sweetener, vanilla extract, and a pinch of salt. Gently heat but do not boil.
Take the mix off the heat, allow it to cool slightly and then add this to the egg yolks and beat in well. Check that you are happy with the sweetness then pour this mixture back into the saucepan and gently heat, whilst stirring continuously for about 5 minutes until it thickens.
Divide the custard between the four pots and sprinkle some sweetener on top.
Bake sat in a small pot of shallow water for around 10 minutes or until light brown.
Recipe Notes
Here's an alternative cooking method... this won't be as firm, but the taste will still be great. Follow steps 2 to 4 but don't sprinkle the sweetener on top. Pop the ramekins in the fridge to cool and set, sprinkle the tops with sweetener and then use a blow torch to melt and caramelise the topping :)
